Crispy herbed potatoes with bacon
Everything is expensive these days and it’s hard to make a home-cooked meal for under $10. Here’s my recipe for crispy herbed potatoes with bacon that can provide a full meal for less than $5.
Ingredients
- 1 can of potatoes
- 2 or 3 rashers of short-cut bacon
- Olive oil
- Salt
- Garlic
- Paprika
- Herbs of your choice (I used oregano and basil, rosemary will also be good)
- Extra virgin olive oil spray
Method
- Drain the potatoes and dry them on paper towels to soak up extra moisture.
- Gently place the potatoes into a bowl, add olive oil, herbs, garlic, salt and paprika. Mix until well coated.
- Cook the bacon for eight minutes at 180 degrees.
- Remove the bacon, place the potatoes into the air-fryer basket and spread them out. Cook at 180 degrees for 15 minutes.
- Add the bacon, spray everything with olive oil, increase the temperature to 200 degrees, and air-fry for five minutes more to make crispy.
- Remove contents from the air-fryer. Cut the bacon into smaller pieces and mix with the potatoes.
- Add extra salt (optional).
Serve the crispy herbed potatoes with your choice of tomato sauce, mayonnaise and/or condiments.
Of course, you could boil fresh potatoes first, but I’ve gone with a can because it’s quicker, nearly as cheap and there’s less risk of them being too hard or soft. You could also cut potato wedges or buy them frozen, but I love the simplicity and low cost of canned potatos.
